Easy Sheetpan Chicken & Roasted Vegetables
Bold claim but this came out better than I could have ever imagined. This was my first time ever making this recipe up and it is also SO. EASY. The fragrant herbs de provence, the emboldened vegetables; it’s art at its simplest. The key to this I honestly think came down to the seasonings I used (linked at my Amazon!) but you can definitely substitute whatever you have.

Ingredients:
🐔 1 Lb of thin sliced chicken breast filets — (if they don’t have those you can cut normal breasts in half or pound with meat mallet) | 💙💜: 0, 💚: 7
🧂Lowry’s Seasoning Salt ~1-2 Teaspoons* | 💙💜💚: 0
🧄 McCormick’s Grillmaster Seasonings Roasted Garlic & Herbs ~1-2 Tablespoons* | 💙💜💚: 0
🥄 Everglades Seasoning ~1-2 Tablespoons* | 💙💜💚: 0
🪴 Herbs de Provence ~1-1.5 Tablespoons | 💙💜💚: 0
🧀 5 Teaspoons of Grated Parmesan Cheese | 💙💜💚: 1
🫑 3 Tricolor Bell Peppers (1 Orange, 1 Yellow and 1 Red) | 💙💜💚: 0
🥦 1 Head of Broccoli | 💙💜💚: 0
🍶 EVOO Cooking Spray | 💙💜💚: 0
Directions:
Preheat oven to 400 degrees. Chop peppers into 1 inch rough cut chunks, add to large mixing bowl. Remove broccoli stalks and roughly dice broccoli into florets; add to same bowl. Liberally spray all vegetables with EVOO cooking spray until they’re coated. Measure out seasonings into individual bowls. Now add to the vegetables about 2/3 of all the seasonings EXCEPT the herbs de Provence. Set veggies aside. Cube chicken into about 1-2 inch chunks and add to separate bowl. Spray liberally with EVOO spray. Add the remaining seasonings and all the Herbs de Provence to the chicken. Cover 2 cookie sheets with aluminum foil and spray with nonstick spray. Divide out chicken and vegetables evenly onto trays and ensure all veggies/chicken are flat on the tray. Cook for 15 mins at 400 degrees. Measure out Parmesan cheese into a bowl. Now remove both trays and flip chicken and veggies. Top all chicken and veggies evenly with Parmesan cheese and switch whichever sheet was on the bottom to the top of the oven. Cook for 10 additional minutes and then serve immediately!
